A textural white for those looking something out the ordinary. A field blend of Riesling, Pinot Gris and Sauvignon Blanc sourced from Garagistes on the Mornington Peninsula.

75% Sauvignon
22% Riesling
3% Pinot Gris

Three separate parcels were Carbonically Fermented for 4 weeks.
Essentially the grapes were put in fermenters and left to do their
thing.
The parcels were then pressed to stainless steel to ferment dry
before being sent to barrel for 9 months.
The 3 parcels were then blended to achieve the desired result; a
wine that is super textural and spicy. A wine that is more than the
sum of it’s parts.
The Sauvignon brings green capsicum, green fig and jalapeño
while the Riesling contributes ginger and vibrancy. The Pinot Gris
mainly brings structure and a hint of smokiness. The wine is more
structural than your average white wine due to the extended skin
time.
