Sobremesa ‘Vibes on Toast’ - Blend 02

Brewed back in June 2025 with 100% Australian grown grains from Voyager (NSW). Schooner, Munich, Vampire Rye, Winter Wheat, Biscuit, Voodoo & Rolled Oats. Hopped in the boil w/ East Kent Goldings (UK) and Tettnang (DE) to 18 IBU.

This beer was boiled for 3 hours as was done traditionally to achieve kettle caramelisation. This imparts colour and flavour which is only achieved through this process.

Primary fermentation occurred in barriques for 11 months with a blend of lager, saison yeast, brett. lambicus & lactobacillus. This was fermented cooler at around 14-15 C to restrain ester formation and accomodate for the blend of lager and saison.

Packaged on May 4th and bottle/keg conditioned for 11 weeks.

Aromas of cherry cola, figs & tobacco leaf.
On the palate there is a lovely acidity that cuts through some of the percieved sweetness.
Toffee, burnt toast & mulberries.

A special beer that is drinking beautifully right now but will be rewarding to cellar.
