Our version of a new world Sauv Blanc. All the classic, clean and crisp elements but with added texture and complexity.

This fruit comes from the Witchmount vineyard up the road in Sunbury, a vineyard whose main claim to fame (apart from growing great fruit) is that it used to be owned by Eric Bana’s mate and featured in that documentary Love the Beast. The fruit was harvested at the end of Feb and went straight into the press. The juice was then fermented at around 15-16 degrees - a couple of degrees higher than is typical - resulting in a great balance of citrus and stone fruit aromas and flavours to complement the tropical fruit and cut grass characteristics. After fermentation we transferred the wine away from gross lees and matured for a few months in stainless steel on fine lees.

We hope you like the result - a fruit driven (but dry) new world Sauv - with more going on than you might expect.
