We generally ferment our IPAs up top around the 20 degree mark, yet a COLD IPA ferments with a lager yeast instead, preventing any funky fruity esters and leaves us with a beautifully crisp beer, with all the big hop flavour and aroma you want in an IPA. Think zippy passionfruit with a nice hoppy, dry finish.
