TRUTH & WISDOM is our 4th release and the most expressive of our COOLSHIP releases which started with the release of THE BEGINNING in 2016.

Aptly named, TRUTH & WISDOM signifies the ultimate expression of a wild fermented ale, the truth of a long and uninterrupted fermentation untouched by any brewing technique or control whatsoever allowing nature to take full creative control. The wisdom of allowing time to weave its wand and deliver to us whatever it deems worthy after ageing for a combination of 1,2 & 3 years. 

TRUTH & WISDOM is a careful blend of our most revered COOLSHIP ales from 1-3 years comprised of 38% 1 year old COOLSHIP ale, 29% 2 year old COOLSHIP ale and 33% 3 year old COOLSHIP ale. This blend has all the hallmarks of a true wild ale, true in the sense that it was 100% spontaneously fermented and unsupported and left to the proverbial wild. 

To be able to showcase a true snapshot in time and place is what we value the most at La Sirène with TRUTH & WISDOM being our best example of how minimal intervention, time, patience and a singular vision combined with intuitive blending yields an amazingly complex yet super drinkable wild ale. 

We are truly amazed and honoured to be able to create honest and real wild ales in our authentic COOLSHIP, the flux of our climate and temperature variations in a short space of time coupled with our site-specific location next to 130 acres of national park has allowed us to do this successfully over the years and it is one of our proudest moments to share with you the wildest expression to ever come out of our brewery – TRUTH & WISDOM.
